Mark Essig’s “Lesser Beasts”

Author and historian Mark Essig shared some fascinating facts about the oft-misunderstood pig on Wednesday evening as he read from and discussed his book Lesser Beasts: A Snout-to-Tail History of the Humble Pig. Questions from the audience ranged from “What’s the difference between a swine, a hog and a boar?”; “How did the ’90s ‘Pork: The Other White Meat’ campaign come about?”; and “How are ‘prize pigs’ judged at state fairs?” and Mark had knowledgeable responses for all of them. (You’ll have to read the book to find out.) Seriously, this is a fun, well-researched book, packed with little-known info that will make you think twice about your next bacon purchase!
